Unlockable Costumes
I'll update as I unlock some more. Most of these are unlocked through the Challenges, just as a warning. This is a compilation of the costume names and description according to the game.
All of the following allow you to remain playing as Starkiller. In addition, the costumes are saved for the in-game cutscenes.
1. Test Subject Garments
"The standard dress of the clones from the Timira City Cloning Faciluty."
These aren't extremely interesting. It just makes poor Stakiller look like he got his appendix removed. Blah. This the default costume, so you get it once you play.

3. The Dreaming Robes
"The ephemeral garb of the Jedi who enter the trials of the Cave of Evil."
I want to say that you get this after the Dagobah level... Not too sure. If you do, then Yoda makes cool but ugly as heck outfits! Hurhurhur.

4. Hero's Armor

5. The Dark Apprentice's Robes
"The Sith robes of the only perfect clone of Starkiller."
I believe that you have to get at least silver in one of the challenges to unlock this. on the other hand, you might also get this at the end of the game.

6. Experimental Jedi Armor
"Using cutting edge technology recovered on Kamino, this Jedi Armor offers mobility and protection."
Call now, and you'll get one free Halo-like mask for free! Yes, for free! Not my favorite one... Euch. This is unlocked through the challenges.

7. Arena Combat Gear
"Armor designed for combatants in the Cato Arena."
This is another of the auto-unlocked outfits. You have to rescue Kota from the arena to get this one. It makes you look sorta' like a futuristic lumber jack. Heh.

21. Training Gear
"This simple but functional outfit, originally provided by Darth Vader, has survived many training sessions and dangerous missions."
Cool outfit, a lot like the starting gear of The Force Unleashed. I do believe this is provided by default.

22. Sith Stalker Armor
"Sinister armor painfully grafted to the flesh and bone of its wearer, this suit is designed to turn the dark side disciples into hideously deformed assassins feared by Jedi and Sith alike."
Some of the coolest armor, in my opinion. Unlocked when you choose the "Dark Side" ending.

23. Ceremonial Jedi Robes
"Since time immemorial, these white Jedi robes have been worn by only the most honorable Jedi Masters - or given posthumously to those Jedi who sacrificed everything to protect and defend the galaxy."
No different from the Cerimonial Jedi Robes in the original game, these robes are only upgraded with better graphics and textures. Unlocked when you choose the "Light Side" ending.

Character Changers
All of these costumes turn Starkiller into a different character. When in these, the mouth will not move when Starkiller speaks.
8. Guybrush Threepkiller
"Guybrush Threepkiller, in a Star Wars game? Something strange is afoot..."
Indeed, you know what's afoot? Crappy blending of the animation styles. I mean, really! It's super awesome and then you shove this guy in! Grrr. Unlocked only through challenges.

Lots of jumping. Crazy freaking jumping. Like... CRAZY! It's super crazy jumping! It's like... "Dang! I almost got to the top! Ffffff! Stupid moving robot!" Yeah. It's long and frustration, but it's good.

The Alternate Endings
The Light Side Ending
This ending features Juno randomly coming back to life and then a scene of intense Star Wars virtual snogging. I mean, if the script was literally about what was happening, then it'd look more like this...
Starkiller: OMG! Juno! You're alive!
Juno: Shut up and kiss me, fool!
Starkiller: You're a good kisser...
Juno: AAAH! So much kissing!
Afterwards, a scene cuts to where Starkiller and Juno board the ship, flying off. Unknown to them, Boba Fett follows them. Anyway, he decides not to kill Vader, and allows for Kota and the Rebels to interrogate him.

The Dark Side Ending
This ends with Starkiller trying to slay Vader, and ending up being killed by a clone of himself. Vader then tells Starkiller he lied, and Starkiller takes one last look at Juno's dead body before dying.
Take no action
If you take no action for a long period of time, then you'll choose the "Light Side" ending, but get all the perks of picking both of the endings. You'll also get an accomplishment.
The Boss Battles
Cato Neimoidia: The Tarko-se Arena
"Survive your encounter with the Gorog and rescue General Kota."
Tip: If applicable, use the regeneration and focus saber crystals. In addition, it's good to be fast with the controls. Red areas flashing indicate the Gorog is about to smash you there. I suggest if you're in the vicinity of this red, perform a jump dash ((A)+{LB}). These will get you out of stick situations. When the Gorog slams its hand flat, be ready to jump, as it will sweep the area.

Kamino: The Confrontation
"Face Vader to save Juno."
Tip: This requires a lot of times blocking, especially on hard. I suggest using the shock lightsaber crystal in combination with another of your choice. Try and block Vader's blows, and ignore the clones, just go after Vader. When the clones persist, just beat them back into submission with (Jedi) Mind Trick and some fancy lightsaber work. Be aware that the clones can block your attacks and resist the Force. When you hit them, if you quickly use Force Grip against them, you can throw them. As for Vader, when he makes a wide sweeping motion, get ready to block. After a successful block, Vader will stagger. When Vader staggers, immediately press any of the attack buttons ((A), (B), (X), (Y)). Do not try and Force Grip Vader, he'll kick your ass.

The Challenges
1. The Combat Trial
"Prove your mastery of the lightsaber and the Force."
This requires a lot of skill. Commands will appear on the screen, and you must defeat the enemy using that combo.

2. Kamino Drill Grounds Trial
"Prevent the stormtroopers from escaping the drill grounds."
To beat this, it's easiest to fully upgrade your Force Grip and Force Lightning abilities. Zap or throw groups of enemies. When you throw, aim for incoming groups. Just keep the camera circling.

3. Deadly Path Trial

Pretty easy. Force Jumping is good for this challenge. Just jump! Jump for your virtual life!

4. Deflection Trial
"Defend yourself from attacks in any way you can. You must stay on the platform to survive."
Naaaaw! I won't die if I fall from a giant floating platform! Anyway, I suggest using the Saber Blocks ([LT]) at the right times. The waves are pretty large, so it's easier to do that than try and hurl missiles back every millisecond.

5. Retrieval Trial
"Make your way across the dangerous ground to collect the Jedi Holocron and return to safety."
This is basically the Deadly Path trial on steroids. It's more challenging, but more rewarding to win.

6. Domination Trial
"Dominate the central platform as quickly as possible by keeping enemies out of the green circle."
Did I mention the circle turns red when enemies are in it? Blah. All I can say for this one is that balancing your use of the Force and lightsaber attacks really helps in this trial. Other than that... Button smash for your life!

7. Terror Trial
"Defeat the incoming waves of terror troopers and terror spider droids. Health will not be restored for killing enemies."
This one is like the Domination Trial. All you do is repeatedly Force Smash ((A)+(A)+Hold (X)). I suggest you equip both or one lightsaber as the Regeneration lightsaber. The lightsaber trick really helps...if applicable.

9. Scout Trooper Trial
"Survive the gauntlet of Imperial units to retrieve the Holocrons."
Pretty easy. Force Grip comes in handy. Blue patches spawn shields, and large blue patches cause the enemies to disappear. Otherwise, just run like heck. Oh, and the Force Lightning ability helps a lot. The final holocron is obtained by smashing Force Dash {LB}.

10. Gauntlet Trial
"Make your way through the gauntlet of Imperial enemies and escape by reaching the exit."
All I can say is hard as hell! Just when you seem to be alright, WHAM! This giant thing just comes in and keeels you allll! Blah. Whatever. Same advice as given for the Scout Trooper Trial. Another handy thing to have here is the Shock lightsaber.
